How is sea buckthorn harvested, and why does almost every serious sea buckthorn producer talk about cutting it frozen? Anyone researching sea buckthorn, or seabuckthorn, for the first time runs into this detail quickly, because the harvest method is unusual and it is not incidental. It is the reason the fruit survives the trip from branch to pouch intact.
The one-sentence answer: sea buckthorn is typically harvested by cutting whole branches while the berries are frozen, because the tiny, thin-skinned fruit tears or crushes if picked warm and by hand, berry by berry.
Why can't sea buckthorn just be picked like other berries?
Sea buckthorn berries are tiny, 6 to 8 millimetres, smaller than a pea, thin-skinned, and packed in dense rows pressed directly against a thorny woody branch. Picking them individually by hand, the way you would pick a strawberry or a blueberry, is slow and damages the fruit. The skin splits, the pulp and oil inside leak out, and the crop degrades before it ever leaves the field. Ruptured fruit also oxidizes almost immediately, which turns one burst berry into a contamination risk for whatever else is being collected around it. The plant's own thorns make hand-picking painful and slow work on top of that. This is the physical problem every sea buckthorn harvest has to solve.
What does cutting it frozen actually mean?
In the cold-climate regions where sea buckthorn grows wild, branches are cut once temperatures drop well below freezing, late in the season. At that point the berries themselves are frozen solid on the branch. Frozen fruit is firm rather than soft, so the branches can be cut and handled without crushing the berries in transit. The branches are then chilled and the frozen berries are separated from the wood, still below freezing, which keeps the pulp oil locked inside the fruit rather than seeping out as it would if the berries thawed and softened first. This is a physical handling method, not a chemical treatment or a preservation additive.
Cut-and-freeze is not the only method in use. Some operations instead rely on harvesting equipment built specifically for sea buckthorn's dense, thorned branches, since standard soft-fruit harvesters built for blueberries or grapes are not built to work around thorns without rupturing the fruit. Either way, the goal is the same: get the berry off the branch without bursting it, not change what is inside it.
What happens to the berries after separation?
Once separated, the whole berries, skin, pulp and the oil held inside them, are pureed together. Nothing is strained out and nothing is added. The puree is then sealed into single-serve pouches, portioned so each pouch is filled and sealed at the same point in the process, rather than one large batch sitting open and losing freshness pouch by pouch.
